Take advantage of the glut of citrus fruit throughout the winter season by making fresh juices to add zest to any meal. 

Great for digestion, lemons can be paired with freshly squeezed oranges for a double-strength hit of vitamin C – the perfect remedy for seasonal colds and flus. 

This OJ with a twist offers a fantastic kick start to your morning and serves as a great refresher throughout the day.

OJ with a Twist (serves two)

+ Ingredients

2 small peeled oranges (or three peeled mandarins)

1 small peeled lemon 

1 small peeled lime 

1 3 cms chunk of piece of freshly peeled ginger cut into slices

1 3 cms chunk of freshly peeled turmeric 

Dash of cinnamon powder

2 tablespoons of honey

½ cup of water

Ice cubes for serving (if desired)

Fresh mint leaves for decoration

+ Method

Keep ice aside

Place all the other ingredients into a blender and blend for one minute or until the mixture is smooth and without lumps

Add ice if desired, at the bottom of the glasses and pour juice over and top with fresh mint leaves 


Sassy Seasonal Vegetables (makes 8-10 serves)

+ Ingredients

500 grams of fresh mushrooms

500 grams of baby carrots

1 onion, cut into 5 cms thick wedges

1 large yellow pepper, cut into 8 strips

¼ cup finely chopped basil leaves

¼ cup of olive oil

½ cup Parmesan Cheese, divided into two

+ Method

HEAT oven to 180°C

Combine vegetables with dressing and ¼ cup cheese; spread onto baking sheet or lightly based baking tin.

BAKE for 28 to 30 minutes until vegetables are tender, turning vegetables after 15 min.

Sprinkle with remaining cheese and bake for a further 15 minutes until cooked.
