Chia seeds are very versatile and we love using them in our dishes. From crackers to porridges & jams, chia seeds are fantastic for adding texture, thickness & some crunch into your creations. Chia seeds are also little nutritional powerhouses, containing high levels of protein, fibre and Omega-3s. This is a super simple and tasty recipe that can be used as a base, substituting the fruits/nuts for others of your choice.

+ Ingredients

2 cups almond milk, coconut milk, hemp milk or other milk of your choice
3 tablespoons chia seeds
1/4 tsp vanilla powder
2 medium bananas (can be replaced for a large handful of cashews)
1 tablespoon coconut sugar or other sweetener of your choice

A large handful of berries (or any other fruits of your liking)

+ Method

Soak the chia seeds in 1 cup of your preferred milk overnight. When you mix the chia seeds with the milk make sure you stir continuously
for a couple of minutes to avoid the chia sticking together.

In the morning, place the vanilla powder, bananas (or cashews if you are using them), coconut sugar and berries into the other cup of milk and blend until smooth. Then add the soaked chia mixture and blend for a few seconds to incorporate.

Serve sprinkled with hemp seeds, cacao nibs, chopped fruits...
