Makes one sharing portion, enough for two to share.

+ Ingredients

20g Puffed rice
100g Bombay Mix
25g nylon sev (type of crunchy dried noodle, available from Asian supermarkets)
1 tomato, chopped
1/2 small onion, chopped
Thumb-sized piece of ginger, grated
Small handful of fresh pomegranate seeds
1/2 small green chilli, chopped
1 teaspoon mint chutney (green Tabasco sauce would work)
1 teaspoon tamarind chutney (tamarind paste mixed with a little sugar, water and chilli)
Pinch of salt
To garnish
Small handful chopped coriander

1 teaspoon of lime juice

+ Method

1) Mix all the ingredients together.

2) Sprinkle over a little more of the nylon sev for extra crunch.

3) Garnish with coriander, lime juice, and serve immediately.
