+Ingredients
60 grams butter (or nuttlex)
1 tablespoon of apple cider vinegar
60 grams raw sugar
4 heads of trimmed, halved witlof
Sea salt and pepper to taste
½ cup of chopped walnuts
¼ cup of finely chopped chives
400 grams of silken tofu
+Method
In a large heavy bottomed fry pan melt over medium heat butter or nuttlex with raw sugar until sugar has melted
Turn heat down and add eight witlof halves
Turn witlof halves every 2-3 minutes
At about 6 minutes into cooking them, add walnuts into pan
Cook witlof halves until they are golden and walnuts are coated approximately 10 minutes
Gently add crumbled silken tofu to warm through adding 1 tablespoon of apple cider vinegar and chives to the pan
Gently toss until all ingredients coated
Serve immediately
