+Ingredients - Dressing
3 tablespoons of lemon juice
1 tablespoon of coconut syrup
2 tablespoons of tamari sauce
¼ cup torn mint leaves
1 finely minced garlic clove
1 tablespoon sesame oil
+Ingredients - Salad
½ cup of unsalted peanuts raw
2 green onions – green part chopped only
½ teaspoon of fresh red chilli deseeded
1 chopped Lebanese cucumber
2 cups of Chinese cabbage
1 red capsicum chopped and deseeded
2 pomelos, peeled de pithed and cut into chunks
¼ cup of coriander torn
¼ cup Thai basil torn
¼ cup of toasted coconut shreds
+Method
Heat a heavy bottomed pan or wok add peanuts and coconut and toast gently then set aside
Toss ingredients of the salad together in a large bowl, then separate into serves.
Blend the dressing together rapidly and immediately pour over salad and serve, topped with toasted peanuts and coconut
