1 cup dried green tea leaves
1 cup shredded kale
½ cup coriander leaves
½ cup chopped spring onions
½ cup peanut oil
1 tsp garlic paste
½ minced green chilli
3 tblsp roasted pumpkin seeds
3 tblsp roasted habas beans
4 limes, zest & juice
4 cups cooked green tea soba noodles
2 tblsp soy sauce
Soak the green tea leaves in warm water for 1-2 hours to remove the bitterness. Drain, pick out any tough stems then chop.
Blanch the shredded kale then refresh, drain and set aside.
Combine the tea leaves, kale, coriander, pumpkin seeds, habas beans, spring onions and soba noodles in a bowl.
For the dressing, sweat off the chilli, garlic in a little oil cooked but they do not need any colour. Add the peanut oil and then remove from the heat.
Now add the lime juice, lime zest & soy sauce. Mix to make a vinaigrette style dressing.
Add as much of the dressing to the noodle mix as youd like.
