+ Ingredients – Loafers

2  400 gram tins of brown lentils thoroughly drained

2 tablespoons of mixed Italian herbs

2 peeled and diced garlic cloves

½ large brown onion chopped and peeled

1 stalk of celery chopped and diced

1 small carrot chopped and diced

1 yellow pepper chopped and diced

1 red pepper chopped and diced

1 cup of chopped diced mushrooms

½ cup shiitake mushroom

1 cup of coconut flour

2 tablespoons of tomato paste

1 tablespoon BBQ sauce

Extra virgin olive oil for cooking


+ Ingredients -Sauce

¼ cup of tomato paste

1 tablespoon of BBQ sauce

Mixed into one sauce ready to serve


+ Method

Heat a heavy bottomed pan gently sauté, garlic, onion, celery, carrot, capsicums, mushrooms

Add thoroughly drained lentils, content of the pan, and all other ingredients into a blender and pulse until mixed but not smooth (leave some chunks)

Form the mixture into burger shaped loafers

Oil the BBQ plate and cook until golden on each side, taking care to gently turn them over to avoid breaking them
