8 whole large mushroom caps - keep the stems for filling

1 small scallion peeled and chopped

1 garlic clove minced

Stems of mushrooms finely chopped

1 cup of fresh parsley chopped

¼ cup of almond meal

Extra virgin olive oil to cook


Place large mushrooms on a plate

Mix all other ingredients in a bowl and stuff the inside of the mushrooms and gently pat contents down until firm

Oil the BBQ and cook mushrooms on both sides until golden ensuring that the stuffed side is turned over gently so the contents does not fall out
