Guacamole
- 1/2 avocado
- 4 cherry tomatoes
- Juice of one lime
- Tea spoon olive oil
- Sprinkle sea salt
- Small amount of coriander - added to taste
Mash up the avocado and chop up the tomatoes, mix together adding in the rest of the ingredients, season to taste.
Sundried Tomato Mayonnaise
Blitz mayonnaise and whole sundried tomatoes together until smooth.
As a guide use 2 pieces of tomato per person.
Butter the toast, add the poached eggs on top. Top with as much guacamole as you like, a couple of spoonfuls of mayonnaise. Sprinkle some coriander across the top and place a lime wedge to the side.
