+ Ingredients

50ml vegetable oil
25g butter
1 white onion, chopped
1 small potato, diced
¼ can of chopped tomatoes
½ small pepper, chopped
Handful of diced cauliflower
1 small carrot, diced
Handful of French beans, chopped
Handful of peas
1 tsp red chilli powder
½ tsp turmeric powder
1.5 tsp cumin
2 tsp garam masala
4 soft bread rolls (burger buns)

Handful of fresh coriander leaves, 4 lime wedges and 1 chopped red onion (to garnish)

+ Method

1. Heat the oil in a pan; add chopped white onion and sauté till golden brown.

2. Add all the dry spices to the pan and cook for one minute. Sprinkle a little water in the pan and sauté for a few more moments.

3. Add the tomatoes and cook till they are soft and oil separates.

4. Parboil all the vegetables and add to the sauce mix. Cook on low heat until they become mushy.

5. Over a medium heat, mash the mixture with a potato masher.

6. Add half the butter and continue cooking till almost completely mashed.

7. Add more butter, just before service, for that fresh buttery flavour.

8. Grill the bread bun on a hot griddle, butter and serve with the bhaji mash in a bowl, topped with chopped onions, coriander and lime wedge.
