+ Ingredients

200g cooked quinoa (red)
200g cooked chickpeas
1 fresh beetroot
150g feta cheese
Sea salt

Black pepper

+ Method

1. Mash the chickpeas with a fork and mix with quinoa, crumbled feta cheese, salt and black pepper.
2. Peel the raw beetroot and grate it. Mix together with the chickpeas, quinoa and feta cheese. Season with sea salt and pepper.
3. The mixture should be moist and easy to mould into balls.
4. Fry in olive oil until golden.

Tip: These meatballs can be served as a main course or as a snack.
