+ Ingredients

White beans 500g
Onion x1 diced
Celery x2 sticks diced
Garlic 1 head
Rosemary x 1 sprig
Bay leaves x4
Olive oil 75ml
Alexander, 250g bulbous new growth of the flower buds before they break the soil

A chunk of Ticklemore goats cheese

+ Method

Soak the beans overnight, change the water for fresh, season well & bring to the boil & skim of scum as it comes to the boil.

Meanwhile sweat the veg & herbs in the olive oil. Combine the two & cook with a cartouche & lid on a very low heat until tender.

Blanch the Alexander in three changes of fresh boiling salted water, drain, then slice and serve on top of the hot beans, add a good glut of oil to dress & shave Ticklemore over the top
